Catering service uses digital application to minimise food waste

Leijona Catering, specialized catering service for the military, prepares thousands of meals a week, with 2 000 conscripts and professional soldiers eating at the Ruben garrison restaurant.

The catering firm wanted to raise their responsibility by reducing food waste, through the integration of a digital application into their process. Today, this application is used by all branches and restaurants of the company for monitoring of the kitchen and catering waste. The app doesn’t monitor all the food waste, but an extended upgrade is already planned.

Before adopting the app in 2016, Leijona Catering generated 2 thousand tonnes of biowaste. The application provided comprehensive reports that enabled the catering company to compare its restaurants based on results and graphs. As a result, the application led to a 40 % cut in food waste in the garrison restaurant. Biowaste volumes fell by over 100 tonne during the first year. Such measures as reducing food waste, personnel and raw material costs, also led to financial savings.
